He works organically in the vineyards, uses native yeasts for fermentations and reserves sulfur use to bottling. Vines for the Santenay Blanc are located in a vineyard bordering Chassagne Montrachet, Les Prarons, which translates to “long fields.” Notes of stone fruit and white flowers with a pretty minerality on the finish."
