Making Magic In Minervois

As many of you know, we're hosting a special in-store wine tasting this Saturday from 2-4 pm focusing on the Languedoc-Roussillon region of France. Yes, this event will take place on Halloween, and no, there's nothing spooky about the Languedoc-Roussillon.

In honor of our upcoming wine tasting featuring the wines of the Languedoc-Roussillon, today's email celebrates Minervois which is found in the western portion of the region.

Chateau de Paraza Minervois is a blend of 40% Syrah, 40% Black Grenache and 20% Mourvèdre.

It has a delicate nose opening into red fruit aromas with a touch of mild spices such as nutmeg and clove. The mouth is full and pleasant and reveals hints of black cherry and spicy flavors.
There is a beautiful harmony here leading to a generous and long finish.

As with many wines in the appellation, a separate fermentation of each grape variety begins after a short cold carbonic maceration, then vatting for 15 days with daily grape stomping or pumping over. The fermentation is carried out at a controlled temperature between 78-86°F. The final stage is blending after a previous tasting.

"A rich red, with dark chocolate and sandalwood notes to the dark plum and dark currant flavors. Shows pepper notes midpalate, leading into the spicy finish. Drink now through 2019. 2,600 cases imported." (Wine Spectator)
